Restaurant worthy, I says. What’s in this? Cauliflower, spinach, tomato, potato, chickpea, onion, and peppers. The sauce is made from coconut milk + cayenne pepper + veg broth + curry powder + brown sugar.

Soups and stews are my comfort food. Chickpeas are a big part of my healing treatment. When Leo makes this chickpea stew, I’m in a happy place. What else is in here? Cilantro topper, onions, green peas, potatoes, lentils, tomatoes, carrots, bell peppers, spinach. Served with a side of roasted brussel sprouts!

Spinach is sweet, pungent and cooling. There are many great benefits for those that can use its properties.

I’m not quite certain that I need to even post this recipe, it’s so straightforward. Of course, you can add ingredients and create a soup with more depth if you like.

one pot

1 bunch spinach
1-2 slices ginger

Boil a pot of water. Slice ginger, wash spinach. Once brought to a boil, add the ginger slice(s). Then add the spinach. Boil for a minute or two. Turn down heat and let simmer for a few min.
Yup, that is all.

Here is a more complicated but very rewarding spinach soup recipe if your body craves extra ingredients.

It’s quite fun coming up with random recipes. Here’s one brought to you by my effort of trying to eat more raw spinach (because it’s alkaline producing!).

frying pan
one pot
small mixing bowl

eggs, 2
raw spinach, 1-2 cups
medium firm tofu, 5 slices
shiitake mushrooms, 10

dressing ingredients
parsley, 1/4 teaspoon
sage, 1/4 teaspoon
marjoram, 1/4 teaspoon
oregano, 1/4 teaspoon
dijon mustard, 1 teaspoon
lemon juice, 1 teaspoon
white wine vinegar, 1 tablespoon
olive oil, 3 tablespoons

Boil water in pot. Place eggs in boiling water for 5 min.

Heat frying pan to low-medium.
Take medium firm tofu and cut 5 slices and fry until slightly brown.
Wash mushrooms and fry until soft.

Whisk all dressing ingredients in small bowl.

Prepare a bed of raw spinach on a plate, place hard boiled eggs, cooked tofu & mushrooms on top. Add desired dressing on top of all.

Optional: Add sliced avocado! Yummmmmm.

Enjoy the salad!

The Anna plant (aka. Spinach plant) has sprouted finally! I’ve got my Spinach, Radish, Beet plants growing strong.
Now on to potting up & giving them some nitrogen/phosphorus/potassium strength!

It’s the start of my new garden, out on my small condo patio. Wish me luck, I really need it!

Spinach, Beets & Radishes (named after the KinseyKid that helped me plant each one).
