Leo took things to a whole new level with his cooking.

He cooked a whole tilapia fish, thai style. That means it was a bit sweet, a bit sour, and bursting with flavours that you can smell and taste.

Here it is as a steamed broth style. Have I mentioned before how much I love cilantro? There was no shortage of it in this dish.


And here it is as a fried sweet and sour style (which might be called Escabeche in the Philippines).

The boyfriend loves fried rice. You can really make fried rice with anything, so here is a random recipe that I slapped together one afternoon.

tomato, 1 – chopped
onion, 1/4 – chopped
ham, pre cooked, 1/2 cup
rice, cooked (day old is fine!), 1 cup
soy sauce, dark mushroom, 1-2 teaspoons

a pan or skillet or wok

Heat up the pan in between low-med. Chop the tomato, onion and ham into medium sized chunks.
With a bit of oil, cook the ham and onion first and then set them aside in bowls (don’t need to cook all the way through, as you’ll be throwing it back into the pan).

Add the rice to the empty pan and fry for several minutes. Add the soy sauce and stir into the rice.
Create a hole in the middle of the rice and pour a drop or two of oil and place tomatoes in the centre.

Let the tomatoes cook and soften. Add the ham & onion back into the pan and mix altogether.

Serve it hot!
