This is my first attempt to make leek pesto from scratch.

A few learnings from the experiment:
1. try to find wild leeks!
2. add more olive oil, the pesto wasn’t creamy enough

Otherwise, it was a moderate success.

Highlights from the experiment:

2. I got to use honey from my home village in Coorg, Indai:
3. I got to roast me some cashews

I used the leek pesto to mix with linguine pasta and olives + roasted cherry tomatoes on the vine.

I’ll try making the pesto again with the learnings in mind and hopefully hit a home run and can post the recipe.
