I love it when items in our fridge randomly come together to form a fantastic meal.
The boyfriend opens the fridge and sees:

– basil pesto from our good friends Shane & Jess (shown in picture above)
– fresh sockeye salmon caught during Shane’s latest fishing trip…so I mean really fresh!
– asparagus

Naturally, we want to smother the pesto on the salmon and bake it! We steam some asparagus and decide to serve some rice on the side as well.

Ingredients (yields 2-3 servings)
– whole side of salmon, 1
– basil pesto, 4 tablespoons
– asparagus, 8 pieces

Tools
– baking pan
– foil
– pot

Directions
Pre-heat the oven to 375.
Place foil on baking pan. Clean the salmon and place on foil. Spread pesto on top.
When the oven is ready, put the salmon into bake for 10-15 min. (depending on how small/large your salmon side is). The one in the picture took 15 min.

With about 5 min. left, boil a pot of water.
Once the water has boiled, place the asparagus into the water for about 30s – 1min. Then place the asparagus in cold water to stop it from cooking any longer, so it doesn’t get too soft. This is the blanching method.

And we’re done, yet another easy peasy meal complete.
