what is your comfort food?

Mine would have to be:
1) Wonton noodle soup…ohhh that broth is so soothing.
2) Congee, the way my mom made it (everybody’s congee is different, and everybodys’ mom’s congee is the best I’m sure)

I love fish & and I love congee, so here’s a recipe to a comforting cod congee. Enjoy it in a front of a cozy fire near you…

Ingredients (4-6 servings)
– rice, 1 cup
– ginger, 2-3 slices
– vegetable oil, 1-2 teaspoons
– water, 8 cups
– cod fillet, cubes
– soy sauce, 1 tablespoon
– sesame oil, 1 tablespoon
– oyster sauce, 2 tablespoons
– green onions, for garnish
– cilantro, for garnish

Tools
– 2 medium bowls
– 1 large pot

Directions
Slice cod fillet into cubes. Pour oyster sauce, soya sauce, sesame oil and cod cubes into medium bowl. Mix together so cod is covered evenly, and let marinate in the fridge.

Slice ginger. Place rice into a medium bowl and rinse with water. Drain water, and rinse 2 more times. Add oil and cover rice thoroughly with oil. Pour water into the large pot and add the rice and set heat on high to bring the water to a boil.

Once the water has come to a boil, add the sliced ginger.
Let this cook for approximately 1.5 – 2 hours. Keep an eye on the pot, stirring occasionally. Add water if necessary (if it becomes too thick for your liking, consistency is all based on preference).

Lastly, add the marinated fish in and cook for an additional 10-15 minutes.

Serve with cilantro & green onions as garnish. I like to add a few drops of sesame oil as well!

Good ol’ comforting bowl of congee, complete!
